Tofu Ginger Salad

As a vegetarian (turned flexitarian), I’ve had to think of new ways to love salads and find better methods for sprucing up tofu. To make a really quick salad, just top it with silken tofu and pour on a little ginger dressing (my favorite!).

Get the recipe for the dressing:

Easy Ginger Dressing

1/2 cup minced onion
1/2 cup olive oil
1/3 cup rice vinegar
2 Tbsp. minced celery
2 Tbsp. water
2 Tbsp. minced fresh ginger
2 Tbsp. ketchup
4 tsp. soy sauce
2 tsp. sugar (Sometimes I forget the sugar and the dressing is even tangier)
2 tsp. fresh lemon juice
1/2 tsp. minced garlic
1/2 tsp. salt
1/4 tsp. black pepper

Put all the ingredients into a food processor and blend until the dressing is well mixed.
